Addictive Turkey Jerky (in the Oven)

My husband loves jerky and I've been more concerned with nitrates and preservatives lately.  A small 3 oz. pack of nitrate free turkey jerky is $6 or more.  So I decided to try to make my own.  I do not have a dehydrator, so I researched how to do it in the oven.  I bought a 3 lb. frozen boneless turkey breast from the Aldi freezer section....I think it was around $5.  When I was ready to use it, I let it thaw just a little bit, removed the wrappers and gravy packet, trimmed off and discarded any fat or membranes and started slicing it.  You will need a sharp knife (please be careful!!) and then you will slice it into thin strips.  The more uniform the strips are, the more even the cook time and texture.  Since this was my first go, my strips varied from big to small and so I had to keep checking the cook time.
  After I had cut the turkey into strips, it was time to marinate it.  This is where you can really get creative and personalize it to your taste.  I used pretty generic jerky marinade items.
*3/4 Cup Soy Sauce, 1/2 Cup Worcestershire sauce, 3-4 Tablespoons honey,  2 Tablespoons Liquid Smoke, 1/4 Country Bobs Original Steak Sauce and 3 Tablespoons Red Pepper Flakes* Combine these items (or whatever you choose) into a large Ziploc bag and mix together.  I had to work the honey into the sauce to combine well.  Once mixed really well, add in the turkey slices.
You will want to let this marinate overnight for a good 10-12 hours, turning the bag over occasionally, so that all the turkey gets coated well.  Whenever you're ready to start, take your turkey out and drain it in a colander and let turkey come to room temperature.  Blot off any remaining moisture from strips.  Line the bottom of your oven with foil, remove racks and preheat it to 175 degrees.  Start piercing/hanging your strips from wooden or metal kabob skewers.  When I ran out of skewers, I just used toothpicks, especially for the smaller pieces.  I also had pieces that were just too small and I stir fried them separately on the stove top and they were delicious too!
Place a rack back in the oven, hang the jerky and prop a wooden stick or object in the door (about a 1 inch gap) while cooking.  This is an important step to allow the moisture to escape and the meat to dehydrate.  
Set timer for 2 hours and then check (this is a little early, but if you have any really small pieces, they might be done).  Jerky will shrink, become darker in color, and is ready when bent, it gives way before breaking but doesn’t snap.  If not ready, check every 1/2 hour or so.  The longer the time, the chewier the jerky will be.  You may have to take pieces out in waves, like I did, because some were ready earlier than others.  Jerky may be stored in an airtight container on the counter for a couple weeks or frozen.  

As my husband said, "I've never tried crack before, but I imagine it to be a lot like this turkey jerky."  I'll take that as a compliment and I'll definitely make this again.  I think the second time will be a lot easier, now that I know the process better.  Happy Jerky Making To You!!

Super Bowl Party & Taco Bell Sauce Review

I will be the first to admit that I am a Taco Bell Sauce hoarder.  I have a tupperware bowl filled with Taco Bell Mild Sauce & Verde Sauce in my kitchen cabinet, not to mention the middle console in my car.  I was so excited to be picked to participate with Crowdtap, Kraft & Taco Bell in sampling these sauces, which I already knew I loved.  I was even more excited and impressed to find out that it was only $1.99 for a bottle!  I am a bargain hunter by nature and that's a bargain!  So we had a little party called the Super Bowl to celebrate.
    Okay, so most of the dudes were downstairs watching the game, but our food spread was amazing!  Here are just a few of our best pairings:
Amazing Mac & Cheese with Hot Sauce!  Yes, please!
Pulled Pork & Baked Beans are amazing with Taco Bell Sauce too.
We also had 7 layer bean dip, guacamole, chips, pesto dip, cheddar bacon pinwheels, couscous pasta salad, sweet potato cups, salted caramel cookie bars, maple cinnamon rolls and cheese cake bites.  This was the best spread that I think I've ever been a part of.  Thank you everyone!  Yum!  My mouth is watering just posting these pictures.  Who won the Super Bowl again?  GO CHIEFS!!!

Pampers Swaddlers Sample & Share Review


I was recently selected through Crowdtap to sample, share and give feedback on Pampers Swaddlers.  I have an 11 month old boy who is becoming more active everyday.  I was not a Pampers loyalist.  In fact, I usually used store brand diapers because they were cheaper, but cheaper did not mean better.  At night, my store brand diapers were leaking.  What a pain!  It's not like I don't have enough laundry as it is!  So I was really excited to get to sample these premium Pampers Swaddlers diapers.  My friend, who has a 10 month old boy, got her own pack to sample with me as well.  Did you know that Pampers Swaddlers are available up to size 5 now?  Great quality & comfort for more of your childs life!  Don't forget to use the coupon that comes in your pack of diapers, every little bit of savings help!
These diapers were really great.  They are super soft, thin and absorbent.  Kannon had no leaky mornings or blowouts in these.  They also have a convenient color changing line in front so you can tell when the diaper needs changed.  I thought they only had those for newborn diapers!  Such a brilliant concept.  Here is my sons diaper after he had wet it.  TMI?  Maybe, oh well.  That gets thrown out the window once motherhood hits.  No shame.  See the green line?  Even after it was wet & soiled, it was still thin.  The absorbency really amazed me.  I mean, where did it go?
Thank you Pampers & Crowdtap for letting us sample your Swaddlers!  We love your diapers.  They are the softest I've felt.  And the boys had fun moving around in them too…..so much so, that it was hard to catch a good picture of them together.  I don't know how child photographers do it!
**I just got an update from my friend Kate, who sampled the diapers with me.  She was raving about how much she loved them!  She admitted to using her store brand during the day and saving the Pampers Swaddlers for nighttime because of how absorbent they are.  She was so excited that her little guy was not leaking through them after a full night!  If you are having leaky diapers, you have to try Pampers Swaddlers!**
